Prince of Persia: The Sands of Time
This game has everything I could ask for. It takes elements of action, fighting, and platformer games and ties them all together perfectly. This, plus an interesting story, steadily increasing difficulty, and a few good puzzles make this game on of the best I've ever played on the Gamecube.
