You'll fight one Goddess at a time during the same battle. The order they appear in depends on the order you visited the islands. The Goddesses use a solid mix of special Elemental attacks and some high-end Red Elements. All Goddesses can cast Volcano, so use traps whenever possible and you may hit pay dirt.
